Cooking Classes on the Central Coast

Small-group plant-based classes, taught from a permaculture garden in Killcare.

For anyone who wants to cook with more confidence, more colour, and more vegetables on the plate.

There's something different about cooking when you've picked the herbs yourself an hour earlier, learned how to balance a dish properly, and discovered how delicious plant-based food can be when it's done well. That's what these classes are about - not strict rules or fancy techniques, but real skills you'll use again and again at home.

I trained as a plant-based chef in New York City and have spent over a decade cooking professionally, but the classes themselves are warm, hands-on, and built for any level. You'll cook alongside me in a small group, share what we've made together at the table, and leave with the recipes, the techniques, and the confidence to recreate everything in your own kitchen.

What you'll learn:

  • Cooking with more vegetables - and making it genuinely delicious

  • Building real flavour with herbs, spices, ferments and good fats

  • Practical knife skills, prep shortcuts and the kind of kitchen confidence that saves you time every week

  • Cooking with what's in season, from the garden or what's at the markets this week

  • A handful of go-to dishes you'll come back to for years

The setting

Classes are held in our permaculture garden in Killcare - a small, working garden where we grow much of the produce that ends up on Pachamama menus. You'll cook in an open kitchen looking out onto the beds, pick herbs and leaves as you go, and eat together at a long table when the food is ready. It's the kind of space where people slow down without trying, and the food they cook tastes a little better for it.

What's included

  • All ingredients, equipment and aprons

  • A printed recipe pack to take home

  • A shared meal of everything you've made together

  • A glass of something seasonal at the table
